Position Summary:
We have an exciting opportunity to join our team as a Culinary Services Manager.

In this role, the successful candidate NYU Langone Health - Long Island is seeking a dedicated and detail-oriented Culinary Manager to join our Food and Nutrition Services team. Reporting to the Executive Chef, the Culinary Manager plays a vital role in maintaining the highest standards of culinary execution, food safety, and operational efficiency within our patient-focused kitchen. This position is responsible for ensuring strict adherence to standardized enterprise recipes, overseeing storeroom operations, maintaining impeccable sanitation standards, and fostering accountability among all staff. The ideal candidate is passionate about delivering high-quality, safe, and consistent food services that contribute positively to the patient experience, embodying our commitment to pushing the standard of excellence in healthcare dining. This role focuses on operational execution and limited menu development.

Job Responsibilities:

Recipe Compliance & Quality Assurance:

  • Ensure all food production strictly adheres to standardized enterprise recipes, portion sizes, dietary modifications, and quality specifications.
  • Conduct regular quality control checks on prepared foods, including taste, temperature, texture, and appearance, before service.
  • Train and coach culinary staff on proper cooking techniques and accurate recipe execution.
  • Monitor food production processes to guarantee consistency across all meals and shifts.

Storeroom Oversight & Inventory Management:

  • Oversee the receiving, storage, and rotation (FIFO - First-In, First-Out) of all food and non-food supplies in walk-in refrigerators, freezers, and dry storage areas.
  • Maintain exceptional organization, cleanliness, and labeling within all storage areas.
  • Assist with inventory counts and monitoring stock levels to prevent shortages and minimize waste.
  • Ensure proper procedures are followed for requisitioning and issuing supplies.

Sanitation & Food Safety Oversight:

  • Champion and enforce rigorous adherence to all food safety protocols, including HACCP (Hazard Analysis Critical Control Point) guidelines, local Department of Health (DOH) regulations, and The Joint Commission (TJC) standards.
  • Conduct routine inspections of kitchen areas, equipment, and storage facilities to ensure compliance with sanitation standards.
  • Oversee and document cleaning schedules and procedures for all culinary areas and equipment.
  • Ensure staff maintain proper personal hygiene and follow safe food handling practices at all times.
  • Monitor and document food temperatures throughout the flow of food (receiving, storage, preparation, holding, service).

Staff Supervision & Accountability:

  • Provide direct supervision, guidance, and support to culinary staff during shifts.
  • Assist the Executive Chef in staff training, performance feedback, and fostering a positive, collaborative work environment.
  • Ensure staff understand and comply with departmental policies, procedures, and standards of conduct.
  • Promote a culture of accountability, teamwork, and continuous improvement.

Operational Support:

  • Collaborate closely with the Executive Chef and other department leaders to ensure smooth daily culinary operations.
  • Assist in troubleshooting operational issues related to food production or equipment.
  • Support the "patient first" philosophy by ensuring food quality and safety directly contribute to positive patient outcomes and satisfaction.

Minimum Qualifications:
To qualify you must have a Bachelors Degree in Food Service Management, Hotel / Restaurant Management, Hospitality Management, or a related field, or equivalent combination of education and experience (experience based equivalency would be 8 years of culinary experience).
Must be able to perform computer skills to use departmental information systems: CBORD, Event Master and Meeting Room Manager. (Training will be provided in orientation period.)
Three years of management experience in hospitality / food service industry.
Certified in ServSafe program (within 6 months of hire.)
Must be able to read, write, and speak English.

Required Licenses: ServSafe Certification

Preferred Qualifications:
1- 2 years Supervisory or Management.

NYU Langone Health provides a salary range to comply with the New York state Law on Salary Transparency in Job Advertisements. The salary range for the role is $64,382.25 - $107,303.74 Annually. Actual salaries depend on a variety of factors, including experience, specialty, education, and hospital need. The salary range or contractual rate listed does not include bonuses/incentive, differential pay or other forms of compensation or benefits.
